One of my feel-good recipes is the one I want to tell you about today. It is for sure my most cooked meal of 2021, simply because it is quick, easy, and absolutely delicious. This recipe also made me fall in love with peas for some reason. I used to hate them. Now I cannot go a week without them. I hope you love the recipe as much as I do and, please, let me know if you have tried it.
For this recipe you will need (for 1 portion):
Rigatoni pasta
(as much as you like)
A handful of peas
3-4 bacon strips
Parmesan cheese
100ml of cream
salt, pepper
To boil the pasta, fill some water with a teaspoon of salt into a pot. Add a handful of frozen peas, so that they are thoroughly cooked through, once the pasta is ready. As soon as the water is boiling, add as much pasta as you wish to the water and let it boil until it is al dente. The Rigatoni pasta I usually buy takes about fifteen minutes.
While the pasta is taking its time, crisp up the bacon in a pan. For that, simply add the bacon strips in a non-stick pan and let it cook until it gets slightly brown. Remove the bacon from the pan and cut it in thin slices.
After that, fill about 100ml of cream into a small bowl and grate as much of the Parmesan cheese into it as you like. I usually put a looot in there. The more, the better, in my opinion. Season it with some pepper.
Once the pasta is ready, drain the water from the pot and add its contents to the pan that you fried the bacon in. The pasta will soak up the grease and all the good flavours from the bacon, which makes it taste so amazing. Then add the bacon and the Parmesan-cream mixture and let the sauce get warm and thicken. Finally, season to taste and then it is ready to enjoy.
