Vegan Chili Sin Carne // RECIPES

Today I have got another recipe for you. Lately, I have been obsessed with this Chili sin Carne recipe. It is vegan, healthy, easy to make and absolutely delicious at the same time. You can eat it with rice, in a tortilla wrap or with tortilla crisps, which is probably my favourite way. 

For this recipe you will need: 

1 onion
1 clove of garlic
1/2 a red pepper
125g of red lentils
1 tbsp. of tomato paste
300ml of vegetable stock
200ml of tinned chopped tomatoes
1 small tin of sweet corn
1 small tin of kidney beans
Cayenne pepper
salt, pepper


First, chop the onion, half a red pepper and the garlic into small pieces and sauté them in a pan with a little bit of olive oil or butter. When the onions are softened, add the red lentils and tomato paste and continue to cook it for 2-3 minutes. 

After that, the vegetable stock and the tinned tomatoes are added. Let it simmer until the lentils are soft. During this process you might want to add more vegetable stock if it gets too dry. 

Lastly, put in the sweet corn and kidney beans and season it to taste with salt, pepper and Cayenne pepper. Serve it with either rice, in a wrap or, in my case, tortilla crisps and enjoy. :)
